One of my goals this year is to start cooking more. I’ve always been intimidated in the kitchen and even scared to use knives because I’m super clumsy.. but my curiosity and longing to connect more with my Lola’s region in the Philippines, Bicol, outweighs the fear. Her region is known for the use of coconut milk and spicy peppers in their Filipino food.
One thing that inspired me to look for easy Bicol Express and Laing recipes was this FEATR video where they learn about using the different stages of the coconut in Naga City (where she’s from!). Even the milk! They will process and use every stage of coconut milk for different dishes.

My Bicolana Xxpress came out pretty good for my 1st try?! Next time I want to make laing, which is basically the same dish but with gabi (taro leaves). The flavor is like a super shrimpy coconut milk, reminds me of thai curry. Yummy! So proud of myself :-)

In one of the last conversations I had with my Lola before she passed away, she told me that if an opportunity comes up, take that chance! words I still try to live by.
